What WhatsApp's features and labels actually mean
WhatsApp shows you a lot of small signals — "online", "last seen today at 14:02", a padlocked chat, an unexplained label reading "user defined" — and explains almost none of them. Several of these get over-read badly. "Online" does not mean someone is reading your message, and treating it that way causes a remarkable amount of unnecessary friction between people.

Does "online" mean someone is reading my message?
No. It means WhatsApp is open and connected in the foreground. They could be messaging someone else entirely, or the app could be open in the background of their attention while they do something else.
Can I hide that I am online?
Partly. You can set "Last seen and online" so that online status is only visible to the same people who can see your last seen, and you can restrict last seen to nobody. You cannot appear offline to one specific person while appearing online to another.
What is a WhatsApp Channel?
A one-way broadcast feed. The admin posts, followers read, and followers cannot reply in the channel or see each other. It is closer to a mailing list than to a group chat, and it is not end-to-end encrypted in the way personal chats are.
